Pumpkin spice granola


Because my husband eats gluten free I make my own cereal to give him a hearty but inexpensive breakfast option. Today I made a new version of granola and am very happy how it turned out. Adapted from 
Thelawstudentswife. 

Pumpkin Granola

Prep Time: 10 minutes

Cook Time: 35 mns.

Ingredients


  • 1 1/2 c pumpkin puree
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground all spice
  • 1/4 teaspoon kosher salt
  • 1/2 cup brown sugar 
  • 3 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 2 and 1/2 cups old fashioned rolled oats
  • 1/2 cup dried cranberries
  • 1/2 cup pecans
Directions: mix together everything but the crasins. Bake at 350 for 20 min stir and bake another 20 mins. Allow to cool, add crasins, then eat or store.
